Ground Chicken and Veggie Meatballs

These delicious meatballs are great for a main dish or appetizer. Serve with homemade ranch dip for extra flavor! Great way to include extra vegetables.

Ingredients
  

  • 1 1/2 lbs Ground chicken (extra lean)
  • 2 Eggs (large)
  • 2 Zucchini (small) Grated
  • 1 Carrot (medium) Grated
  • 1 1/2 tbsp Italian seasoning
  • Sea salt and pepper to taste
  • 3/4 cup Bread crumbs Use Italian-style for extra flavor or gluten-free for additional options.

Method
 

  1. Preheat oven to 400°F
  2. Place the shredded zucchini in a dish towel. Squeeze out all the excess liquid.
  3. Place the chicken in a large bowl. Add the zucchini, egg, carrot, Italian seasoning, salt, pepper, and bread crumbs. Mix until just combined. Roll into balls approximately the size of a golf ball and place on the baking sheet.
  4. Place in the oven and cook for 16 to 20 minutes until cooked through. Enjoy!
    Serving size: 4 meatballs
