Ingredients
  

  • 3 tbsp Butter (divided)
  • 1 tbsp Extra virgin olive oil
  • 1 3/4 lbs Pork chops (bone-in)
  • Sea salt and black pepper to taste
  • 1 tbsp Maple syrup (organic)
  • 2 Apples (medium, peeled, cored, thinly sliced)
  • 1/2 cup Shallots (thinly sliced)
  • 2 tsp Thyme
  • 8 oz Apple cider
  • 2 tsp Dijon mustard

Method
 

  1. Heat a pan over medium-high heat. Add 1/3 of the butter and the oil. Add the pork chop and season with salt and pepper. Cook for three to five minutes per side or until cooked through. Remove from the pan and set it aside.
  2. Add the remaining butter and maple syrup to the pan. Add the apples and shallots and cook for two to three minutes until the apples are tender and caramelized. Add the thyme, cider, and mustard and stir to combine.
  3. Return the pork chops to the pan. Spoon the sauce over the pork chops and cook until warmed. Season with salt and pepper, divide evenly between plates, and enjoy!
    Serving size = one pork chop with approximately one cup of apples and sauce.
