Parmesan-Crusted Halibut

Easy and delicious! This crusted halibut is tender and flaky on the inside with a golden, savory crust on top. Fresh parsley and bright lemon wedges finish the dish beautifully, making it both elegant and simple enough for a weeknight dinner.

Ingredients
  

  • 4 5-6 oz Halibut filets Substitute cod for a less expensive version.
  • 2 tbsp Extra virgin olive oil
  • 1/2 cup Parmesan cheese Freshly grated
  • 1/3 cup Panko breadcrumbs
  • 1 tbsp Parsley (fresh, chopped) Use extra for garnish
  • 1 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Smoked paprika
  • Sea salt & pepper to taste
  • 1 Lemon zest
  • Additional lemon wedges for garnish If desired

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Pat the halibut fillets dry with paper towels. Place them on the prepared baking sheet and drizzle lightly with olive oil.
  3. In a small bowl, combine: Parmesan, panko, chopped parsley, garlic powder, onion powder, paprika, salt and pepper, and lemon zest. Mix well until evenly combined.
  4. Press the Parmesan mixture firmly onto the top of each halibut fillet, creating a thick, even crust. Drizzle a small amount of olive oil over the crust to help it turn golden and crisp.
  5. Bake for 12–15 minutes, or until the fish flakes easily with a fork, internal temperature reaches 130–135°F, and the crust is golden brown.

  6. If desired, add asparagus and cherry tomatoes coated in olive oil while baking halibut to create a healthy, one-dish meal.
