Shrimp Tacos with Pineapple Salsa

Ingredients
- 2/3 cup Pineapple (chopped) If canned, use in fruit juice only
- 1 tbsp Lime juice Fresh squeezed
- 1/4 cup Cilantro (fresh) Use extra for garnish
- Sea salt and pepper to taste
- 3 tbsp Mayonaise
- 2 tbsp Sriracha
- 1 lb Shrimp (peeled, deveined)
- 2 tsp Smoked paprika
- 1 tsp Extra virgin olive oil
- 8 med Corn tortillas (warmed)
Method
- In a bowl, mix together the pineapple, lime juice, cilantro, salt, and pepper. Set aside.
- In another bowl, whisk together the mayonnaise and sriracha. Set aside.
- Heat a pan over medium-high heat. Toss the shrimp with the paprika, oil, salt, and pepper. Sauté for two to three minutes, stirring occasionally, until cooked through.
- Divide the shrimp and pineapple salsa evenly among the warmed tortillas. Drizzle with the spicy mayo and garnish with more cilantro. Enjoy!Serving size = two tacos
