Shrimp Tacos with Pineapple Salsa

Ingredients
  

  • 2/3 cup Pineapple (chopped) If canned, use in fruit juice only
  • 1 tbsp Lime juice Fresh squeezed
  • 1/4 cup Cilantro (fresh) Use extra for garnish
  • Sea salt and pepper to taste
  • 3 tbsp Mayonaise
  • 2 tbsp Sriracha
  • 1 lb Shrimp (peeled, deveined)
  • 2 tsp Smoked paprika
  • 1 tsp Extra virgin olive oil
  • 8 med Corn tortillas (warmed)

Method
 

  1. In a bowl, mix together the pineapple, lime juice, cilantro, salt, and pepper. Set aside.
  2. In another bowl, whisk together the mayonnaise and sriracha. Set aside.
  3. Heat a pan over medium-high heat. Toss the shrimp with the paprika, oil, salt, and pepper. Sauté for two to three minutes, stirring occasionally, until cooked through.
  4. Divide the shrimp and pineapple salsa evenly among the warmed tortillas. Drizzle with the spicy mayo and garnish with more cilantro. Enjoy!
    Serving size = two tacos
