Ingredients
  

  • 1 lb Ground turkey (lean)
  • 1/2 cup Onion (finely chopped)
  • 1/4 cup Green pepper (finely chopped)
  • 1/2 cup Carrots (grated)
  • 1 clove Garlic (minced)
  • 1/2 cup Rolled oats
  • 1 Egg (large)
  • 1/4 cup Ketchup (no-sugar added) Plus 2 tbsp for topping
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • Sea salt and pepper to taste

  • 1 Loaf pan

Method
 

  1. Heat oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease.
  2. In a bowl, mix turkey, vegetables, garlic, oats, egg, 1/4 cup ketchup, Worcestershire, herbs, salt, and pepper until just combined.
  3. Press mixture into the loaf pan and smooth the top. Spread 2 tablespoons ketchup on top.
  4. Bake 45–55 minutes, until cooked through. Let rest 5 minutes before slicing.
    Serving size = 1 slice (about 4 ounces by weight)

Notes

While this recipe takes longer than 30 minutes to prepare, it is still worth including on this site.  Meatloaf is one of my favorite foods.  It's great for a weekend dinner or when you have a bit more time to cook.  The best part is the leftovers.  You can make enough for two or more meals for a quick dinner throughout the week.  
Serving it with baked or mashed potatoes, green beans, carrots, or a side salad can give a variety to additional meals.
This recipe can also be altered by using extra-lean ground beef.  I chose to feature it with ground turkey because it is less expensive (typically).  Also, you can add in ground pork with the ground beef to change it up even more.
Refrigerate leftovers in an airtight container for up to days.
