Raspberry Crisp – Air Fryer

Ingredients
  

  • 2 1/2 cups Raspberries (frozen)
  • 1/2 cup Coconut sugar
  • 1/4 cup Almond flour Plus one tsp
  • 1 cup Quick oats
  • 1/4 cup Coconut oil (melted)

Equipment

  • 1 Air fryer
  • 4 Ramekins – 3.5 ounce

Method
 

  1. Preheat the air fryer to 350°F (175°C).
  2. In a bowl, combine the raspberries, half of the sugar, and one tsp almond flour. Divide the mixture evenly among ramekins. Place the ramekins in the air fryer basket and cook for 10 minutes.
  3. Meanwhile, in a separate bowl, combine the oats, almond flour, remaining sugar, and melted coconut oil. Mix until the dry ingredients are moistened.
  4. Remove the basket from the air fryer. Top each ramekin with the oat mixture.
  5. Return to the air fryer and cook for another 10 minutes. Remove and let sit for five minutes before serving. Enjoy!
    Serving size about 2/3 cup
    6 g fiber per serving

Notes

This updated take on an old-time comfort recipe will become a family favorite!  Raspberries are nutrition powerhouses packed with fiber, antioxidants, and wonderful flavor!  
For those who are following a gluten-free diet, make sure that the oats you use are labeled gluten-free.  Most brands of oats are cross-contaminated with gluten from processing or even from where they are grown.
Change up the recipe by changing the berries used.  Try strawberries, blueberries, or blackberries.  You can even combine all of them for greater variety.
Refrigerate leftovers in an airtight container for up to 3 days.
