This halibut with zucchini and tomatoes is, in my opinion, one of the most elegant 30-minute meals you can put on a dinner table. It's light, vibrant, and bursting with fresh summer flavor — yet it's substantial enough to satisfy even the hungriest members of your household. It is also, from a nutritional standpoint, one of the most impressive recipes on this entire site.
 
WHY HALIBUT?
 
Halibut is a firm, mild white fish with a beautiful clean flavor that takes on the flavors of whatever it's cooked with exceptionally well. Its firm texture means it holds together during cooking without falling apart, making it far more forgiving than more delicate fish like sole or tilapia. Halibut is an excellent source of high-quality lean protein, selenium, magnesium, phosphorus, and B vitamins. It is also a good source of omega-3 fatty acids — though not as rich in omega-3s as fatty fish like salmon, it still contributes meaningfully to your weekly intake.
 
If halibut is unavailable or outside your budget, cod, mahi-mahi, or sea bass are all excellent substitutes with similar textures and mild flavors.
 
THE VEGETABLE COMBINATION
 
Zucchini and tomatoes are a classic pairing for good reason — they cook at a similar rate, complement each other's flavors beautifully, and create a naturally saucy base that keeps the halibut moist and flavorful throughout cooking. COOKING HALIBUT PERFECTLY
 
The most important rule with halibut — and with fish in general — is not to overcook it. Halibut is done when it flakes easily with a fork and is just opaque throughout. This typically takes only 3 to 4 minutes per side in a hot pan. Overcooked halibut becomes dry and loses much of its delicate flavor. Watch it carefully and err on the side of slightly underdone — it will continue cooking briefly from residual heat after you remove it from the pan.
 
TIPS, SUBSTITUTIONS & VARIATIONS
 
- Add capers, Kalamata olives, or a handful of fresh basil for a Mediterranean twist
- A splash of dry white wine or vegetable broth added to the vegetables as they cook creates a more complex sauce
- Fresh lemon zest and juice added at the end brightens the entire dish
- Serve over quinoa, orzo, or crusty whole grain bread to soak up the beautiful tomato sauce
- For a heartier version, add white beans to the vegetable base
 
STORAGE
 
Cooked fish is best enjoyed fresh but will keep in the refrigerator for up to 2 days. The vegetable base actually improves overnight as the flavors meld — store separately from the fish if possible and reheat gently.

Ingredients
  

  • 4 Zucchini (small, cut into big pieces)
  • 2 cups Cherry tomatoes (halved)
  • 4 5 oz Halibut filets (thawed)
  • Sea salt and pepper to taste
  • 2 tbsp Thyme (fresh, chopped)
  • 1 Lemon (medium, juiced) Add extra when serving if desired
  • 2 tbsp Parsley (fresh, chopped)

Equipment

  • 1 13 x 9 baking dish
  • Parchment paper

Method
 

  1. Preheat the oven to 375°F. Cut the parchment paper into four 8-inch long pieces. Fold it in half, then unfold it.
  2. Place the zucchini and cherry tomatoes on the parchment. Season the fish and veggies all over with salt and pepper, then place the fish on top of the vegetables. Sprinkle with thyme and drizzle with lemon juice.
  3. Fold the parchment paper over the fish. Starting at one end, crimp and fold the edges tightly to seal the packet. You want this sealed tight to steam the fish and veggies.
  4. Carefully transfer the parchment packets to a baking dish. Bake for 16 to 20 minutes or until the fish and vegetables are cooked through.
  5. Open the parchment and top with parsley. Serve with extra lemon juice and enjoy!
    Serving size = 1 piece of halibut and about 1 1/2 cups of vegetables.

Notes

Other tips:  make sure the halibut is completely defrosted and patted dry before cooking.  Cooking it in the parchment will ensure a delicious result!
This recipe is a great way to add fish/seafood to your weekly menu.  Seafood is heart-healthy and helps with weight loss or maintenance.  Health experts recommend having two meals with fish or salmon per week for optimal health.
Refrigerate leftovers in an airtight container for up to 2 days.  Add more flavor by adding paprika, red onions, and feta cheese.  Also, consider cod or mahi mahi for a more cost-effective option.
