Apple Pie Oatmeal

Ingredients

  

  • 2 Apples diced small
  • 1/2 cup Water
  • 2 tsp Cinnamon plus more for garnish
  • 1 1/3 cup Plain Greek Yogurt
  • 1/4 cup Hemp Seeds or flax seeds if preferred

Method

 

  1. Combine the apples, water, and cinnamon in a saucepan.
  2. Cover and cook over low heat until the apples are soft, about 10 to 12 minutes.
  3. Cook the oats according to the package directions.
  4. Top the oatmeal with Greek yogurt, warm apples, and hemp seeds. Enjoy!

    Serving size = One heaping cup

    Protein 16g, Carbs 46g, Fiber 7g

Notes

If you love apples and comfort food, this recipe is a perfect match!  The aroma of apples and cinnamon will make your mouth start watering even before you get to sit down and enjoy your meal.  Your kids will love it too!

To alter this recipe, try adding raisins or dried cranberries in the apple compote. You may also change the seeds on top to sunflower, chia, or perhaps sliced almonds or chopped walnuts, if they are more to your liking.  Any way you prepare it, you’ll be trying it again and again!

Leftovers should be refrigerated in an airtight container for up to 3 days.  Reheat on the stove to keep the original taste and texture.
