Ingredients
  

  • 1 1/4 lbs Shrimp (peeled, deveined)
  • 1 1/3 tbsp Cajun seasoning 1 1/3 tbsp is equal to 4 tsp
  • Sea salt and black pepper to taste
  • 2 tbsp Extra virgin olive oil (divided)
  • 1 Lemon (medium, juiced)
  • 8 leaves Romaine (large, chopped)
  • 2 Tomatoes (medium, chopped)
  • 1 Cucumber (medium, chopped)
  • 2/3 cup Chick peas (cooked or canned, drained, rinsed)
  • 1/2 cup Tzatziki

Method
 

  1. Toss the shrimp with Cajun seasoning, salt, and pepper.
  2. Heat half of the oil in a pan over medium heat. Add the shrimp and cook for five minutes, stirring occasionally, until cooked through.
  3. In a bowl, whisk together the remaining oil, lemon juice, salt, and pepper. Add the romaine, tomato, cucumber, and chickpeas, and toss to combine.
  4. Divide the salad and shrimp evenly between plates. Top with tzatziki and enjoy!
    Serving size =  approximately 2/3 cup of shrimp, 1 1/3 cups of salad, and two tablespoons of tzatziki.
