Ingredients
  

  • 1 1/4 lbs Chicken breast (boneless, skinless)
  • 1/2 cup Greek yogurt, plain
  • 1 Lime (medium, juiced)
  • Sea salt and pepper to taste
  • 2/3 cup Unsweetened dried cranberries
  • 1/2 cup Pecans (chopped)
  • 1 Cucumber (large, chopped)

Method
 

  1. Bring a pot of water to a boil and reduce to a gentle simmer. Add the chicken and cover. Let simmer until the chicken is cooked, about 15 to 20 minutes.
