Ingredients

  

  • 1 1/2 lbs Chicken breast or thighs (boneless, skinless) Sliced
  • 2 Sweet potatoes – medium Peeled and cubed
  • 3 cups Broccoli Chopped
  • 2 tbsp Extra virgin olive oil
  • 2 tsp Oregano
  • 2 tbsp Lemon juice fresh
  • Salt & pepper to taste
  • 1/4 cup Parsley (fresh) Chopped

Method

 

  1. Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the chicken, sweet potato, and broccoli with the oil, oregano, lemon juice, salt, and pepper. Spread everything on the baking sheet in a single layer. Cook for 20 to 25 minutes, until the chicken is cooked through and the potatoes are tender.
  3. Divide evenly between plates and top with parsley just before serving. Enjoy!

Notes

You will love how the flavors in the dish complement each other!  This dish is easy to prepare and is a great addition to your weeknight menu.  

You can change the flavor by adding different seasonings.  Do you like Italian flavors?  Add Italian Seasoning along with the oregano.  Add additional vegetables such as zucchini, onions, artichoke hearts, and more.

Refrigerate leftovers in an airtight container for up to 3 days.  Reheat in the microwave or on the stove.
