Ingredients
  

  • 1 1/2 lbs Pork chops (bone-in)
  • 2 tbsp Extra Virgin Olive Oil (divided)
  • 1 tsp Paprika
  • 1 tsp Onion powder
  • Sea salt and pepper to taste
  • 2 Zucchini (small, chopped)
  • 1 Red bell pepper (chopped)
  • 1/2 cup Red onion (chopped)

Method
 

  1. Preheat the air fryer to 375ºF (190ºC).
  2. Brush both sides of the pork chops with half of the olive oil.
  3. Mix the paprika, onion powder, salt, and pepper in a bowl. Rub the seasoning onto both sides of the pork chops.
  4. Place the pork chops in the air fryer basket in a single layer. Cook for eight to 10 minutes, flipping halfway, until cooked through. Set aside and let it rest for five minutes.
  5. Meanwhile, toss the zucchini, bell peppers, and red onions with the remaining olive oil. Season with salt and pepper. Place the vegetables in the air fryer and cook for five to seven minutes, until tender, shaking the basket halfway through.
  6. Divide the pork and vegetables evenly between plates and enjoy!
    Serving size = one cup of vegetables with one pork chop.
