Ingredients
  

  • 2 Eggs (room temperature)
  • 3/4 cup Coconut sugar
  • 1 cup All-natural peanut butter (runny)
  • 2 tbsp Butter (melted)
  • 2 tsp Vanilla extract
  • 1/4 cup Cocoa powder
  • 1/2 tsp Sea salt (extra for topping if desired)
  • 1 tsp Baking soda
  • 3/4 cup Dark chocolate chips

Method
 

  1. Preheat the oven to 350ºF (175ºC) and line a baking sheet with parchment paper.
  2. In a large bowl, add the eggs and sugar and whisk until very smooth.
  3. Add the peanut butter, butter, and vanilla and whisk until fully combined and smooth. Add the cocoa powder, baking soda, salt and use a spatula to mix until just combined. Fold in the chocolate chips.
  4. Scoop two tablespoons of dough per cookie and form them into balls. Place each ball on the baking sheet and flatten with the back of a spoon, leaving some space between cookies. Use another baking sheet or bake in batches if needed. Sprinkle with flaky salt, if using.
  5. Bake in the oven for seven to 10 minutes. Let the cookies cool for 10 minutes before transferring them to a cooling rack. Enjoy!
